Blue Corn Waffles

The first time I had blue corn waffles, I was hooked. I had them at this wonderful, quaint gluten-free breakfast place in Cambria, California called Hidden Kitchen. Their waffles were so delicious that they inspired me to try and create my own recipe since I now needed them in my life. It is a great change-up from the ordinary as well as being another great gluten-free option. And who doesn’t like waffles?

These blue corn waffles are delicious with both savory and sweet toppings. The waffles are lightly sweetened and the texture is soft and fluffy. They are also dairy and refined sugar free. You can enjoy them with eggs, vegetables, salsa, and hot sauce or with berries, bananas, maples syrup, whipped cream, etc. I have enjoyed a variety of toppings on these waffles and they taste absolutely scrumptious each time!

Waffles don’t need to be just for breakfast, make these for dinner sometime. This recipe requires just 1 bowl, 8 ingredients, and about 10 minutes to whip up!

Ingredients You Will Need:

  • organic blue corn flour (a little coarse)
  • gluten-free all-purpose flour
  • sea salt
  • baking soda
  • eggs
  • oil
  • maple syrup
  • cold water

How to Make Blue Corn Waffles

1. In a large mixing bowl, add the eggs and lightly beat them with a whisk. Then add in the maple syrup, oil, and water and whisk together.

2. Add in the blue corn flour, all-purpose flour, salt, and baking soda. Stir together with a large spoon until the batter is smooth and thick. Add a little extra water as needed. The batter should still be somewhat thick, but it should still fall off the spoon easily enough while dropping into the waffle iron. Note: I prefer to use blue corn flour that is a little coarse in texture. I have tried this recipe with super fine blue corn flour and it is not at all the same. The slightly coarse flour gives it more of a crispness and it is not as drying as the very refined flour tends to make the waffles.

3. Spoon out the batter into a heated waffle iron and cook until the waffle iron indicates it’s ready, about 3-4 minutes or until lightly browned. Repeat until all of the batter is gone. This recipe makes about 4-5 waffles.

4. Serve warm with your topping of choice.

Storage Tips and Notes

  • These waffles taste best freshly made, but you can refrigerate them in a sealed bag for 2 days
  • The organic blue corn flour may need to be purchased online since it is not in most grocery stores
  • You can use other gluten-free all-purpose flours but I’ve had the best results with the recommended King Arthur flour
  • Some savory topping options: eggs, avocados, sauteed vegetables and mushrooms, salsa, hot sauce, bacon, sausage, etc.
  • Sweet topping options: banana, strawberries, blueberries, maple syrup, whipped cream, chocolate syrup, etc.

Ingredients
  

  • 2 cups organic blue corn flour (263g)
  • ¼ cup King Arthur Gluten Free Measure for Measure Flour (41g)
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • 2 eggs
  • ¼ cup oil (51ml)
  • 3 tablespoons maple syrup
  • cups cold water + 1-2 tablespoons more, as needed (348ml)

Instructions
 

  • Heat a waffle iron to medium heat.
  • In a large bowl, add the eggs and lightly beat them. Next, add in the maple syrup, oil, and water. Stir together.
  • Then add in the blue corn flour, gluten-free flour, salt, and baking soda. Mix together until the batter is smooth and somewhat thick. Add a little extra water as needed since not all blue corn flour is exactly the same. But make sure not to add too much, just enough for the batter to fall off the spoon.
  • Spoon out the batter into the heated waffle iron and cook until the iron indicates it is ready, about 3-4 minutes. Repeat until all batter is used.
  • Serve warm with your toppings of choice.

    These make a wonderful savory-sweet breakfast. The blue corn has it’s own unique flavor. I put a bit of maple syrup, and a bit of a bottled sauce that had roasted garlic, rosemary, and Dijon on the waffle plate for dipping; it was delicious

    I live in Morro Bay, CA and LOVE Hidden Kitchen. They have another location now in Cayucos. Their blue corn waffles and tortillas are my favorite and let’s face it, all of their food is sooooo delicious. I purchased the blue corn and waffle maker and then search for a recipe.
