¼cupKing Arthur Gluten Free Measure for Measure Flour(41g)
½teaspoonsea salt
½teaspoonbaking soda
2eggs
¼cupoil(51ml)
3tablespoonsmaple syrup
1½cupscold water + 1-2 tablespoons more, as needed(348ml)
Instructions
Heat a waffle iron to medium heat.
In a large bowl, add the eggs and lightly beat them. Next, add in the maple syrup, oil, and water. Stir together.
Then add in the blue corn flour, gluten-free flour, salt, and baking soda. Mix together until the batter is smooth and somewhat thick. Add a little extra water as needed since not all blue corn flour is exactly the same. But make sure not to add too much, just enough for the batter to fall off the spoon.
Spoon out the batter into the heated waffle iron and cook until the iron indicates it is ready, about 3-4 minutes. Repeat until all batter is used.
