- 1½ cups gluten-free all-purpose flour (216g) I used King Arthur Gluten Free Measure For Measure Flour
- ½ teaspoon baking soda
- 1 egg
- ¼ cup salted butter, melted (4 tablespoons)
- 1⅔ cups buttermilk (413ml)
First, melt the butter and set it aside to cool.
In a medium sized bowl, lightly beat the egg and stir in the buttermilk followed by the melted butter. Mix well.
Next, pour in the flour and baking soda. Mix until the batter is nice and smooth.
Heat a waffle iron. (on medium-high temperature if it has a manual setting) Once it is ready, scoop out ¼ of the batter and place it on the center of the iron. Close it and cook for about 3 minutes or until it signals it is ready. Remove and add your favorite toppings.
