Hearty Soda Bread

This hearty soda bread is super easy to make and it has a lovely texture and flavor! Serve it with your favorite stew / soup or just eat it with butter. Enjoy!

Ingredients
  

  • 3 cups Premium Gold Flax Gluten Free Ancient Grains All-Purpose Flour
  • 2 cups unsweetened almond milk or cashew milk
  • 2 tablespoons apple cider vinegar
  • ¾ tablespoon salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon coconut sugar

Instructions
 

  • Preheat the oven to 375°F.
  • Stir together the almond milk and apple cider vinegar in a bowl. Set aside for about 5 minutes for it to curdle.
  • In a medium sized bowl, whisk together the flour, coconut sugar, baking soda, baking powder, and salt.
  • Add the curdled almond milk to the dry ingredients and mix with a spoon until all ingredients are well incorporated and the dough becomes sticky and dense.
  • Dust a little flour on the dough as well as hands and form dough into a 7"X7" round on a cast iron skillet. Use a knife to score the top of the dough in a horizontal and vertical line. (refer to picture)
  • Bake for 30 minutes on the lowest oven rack at 375°F. Transfer skillet to the top rack for another 30 minutes or until nicely browned and an inserted toothpick comes out clean. Let the bread cool on the skillet for at least 5 minutes before transferring to a cooling rack.
