Maple Pecan Bars

These maple pecan bars are a buttery and naturally sweetened dessert. They are crunchy, crumbly, flaky, and positively scrumptious!

Ingredients
  

  • 4 eggs, lightly beaten
  • ¾ cup maple sugar (146g) I used Coombs Family Farms Organic Maple Sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • cups pecans, roughly chopped (189g) unsalted and unsweetened

Almond Crust

  • cups almond flour (166g)
  • ½ teaspoon salt
  • 3 tablespoons avocado or olive oil or melted and unsalted butter
  • 1 tablespoon honey

Instructions
 

  • First, preheat the oven to 350°F and lightly oil a 9.5'' (2.75qt) or 8'' x 8'' glass baking dish.
  • Then make the crust. In a bowl, pour in the almond flour and salt and stir. Add in the oil and honey and stir until the mixture is combined and gets clumpy.
  • Now, pour the mixture into the prepared baking dish and spread it out evenly. Use the back end of a fork and press down on the entire crust until it is nicely compact.
  • Bake the crust for 17-20 minutes, 20 minutes if you'd like it crisper.
  • Meanwhile, prepare the filling. In a medium sized bowl, pour in the maple sugar, vanilla, and melted butter. Use a whisk and mix together until combined. Then pour in the lightly beaten eggs and whisk until the sugar is mixed well with the eggs with no clumps. Stir in the pecans.
  • Finally, pour the filling into the baked crust and bake for an additional 30 minutes. Allow it to cool before cutting it into bars.
